Soon it will be football season... well, kinda soon. And that means chili and chili related discussions. Here we will post the most bad assed chili recipes we can find. Here's my first entry...
Chili with some sonofabitchin coffee in it:
Ingredients:
2 teaspoons oil
2 onions, chopped
3 cloves garlic, minced
1 lb lean ground beef
3/4 lb beef sirloin, cubed
1 (14 1/2 ounce) can diced tomatoes
1 can dark beer
1 cup strong coffee
2 (6 ounce) cans tomato paste
1 can beef broth
1/2 cup brown sugar
3 1/2 tablespoons chili sauce
1 tablespoon cumin
1 tablespoon cocoa
1 teaspoon oregano
1 teaspoon cayenne
1 teaspoon coriander
1 teaspoon salt
4 (15 ounce) cans kidney beans
4 chili peppers, chopped
Directions:
1. Heat oil.
2. Cook onions, garlic and meat until brown.
3. Add tomatoes, beer, coffee, tomato paste and beef broth.
4. Add spices Stir in 2 cans of kidney beans and peppers.
5. Reduce heat and simmer for 1 1/2 hours.
6. Add 2 remaining cans of kidney beans and simmer for another 30 minutes.
Sounds like too many beans but whatever. Your bean to meat ratio is super fijucked. It's not even just the amount of beans, but the lack of meat. I'd have at least an extra pound of ground beef in there. I guess it also kind of depends on the size of the pot you're cooking in. I've got a pretty large crock pot. I like the addition of the sirloin though. I'm not sure why I've never used anything but ground beef. Aside from that, that's a pretty good recipe. I'll probably try it out, sans coffee and beer, and with a couple habaneros tossed in there to dissuade my friends from eating it when they come over.
Since my the spices I keep on hand are pretty threadbare, my chili "recipe" is usually whatever I have lying around. I haven't made a batch in over a year though, so I definitely need to get back on the horse. Once I eventually do it, I'll try and remember what I stuck in it and bring it here.

it would cost me like $100+ to make chili in Korea... Beef is muey expensive as are western style spices (luckily I stole about $150 worth my second month here) _________________

Yea, there are waaaaay to many beans in that. Iwas going to add another 1lb of meat and take out 2 cans of beans when I make it this weekend.
Acend, you could use venison or even duck to make a kick ass chili. As long as they have some sort of hot pepper you will be good to go.
PRO TIP:

Pepper isn't the problem, its the meat. Beef costs more than $4 for 100grams of ground beef here. Duck is even more expensive and I wouldn't even know where to find venison...
The only FAIRLY cheap meat is chicken...But I refuse to make chicken chili. _________________

I've never tried chicken chili, but ground turkey chili is good. I've never tried ground chicken, but it doesn't seem appetizing. _________________

No they do eat a bunch of duck, but not nearly as much pork, chicken, and beef. They eat a ton of beef, but theyimport it all and so its expensive... _________________

Is there any reason why they can't raise cattle in South Korea? they need land also, and there isn't a lot of that, and much of what land there is is very mountainous. Also, not so great for cattle. _________________

Barebones, no fresh produce, but I've started making chili from scratch lately, here's the latest product.
Started out with 2.7 pounds of lean ground beef:
And a mountain of ingredients:
(diced tomatoes, pinto beans, kidney beans, corns, jalapenos, and green chilis)
Added some assorted spices. Salt, black pepper, red pepper flakes, garlic powder and about 3/4 cup of Tabasco sauce.
And I've just begun the simmer process:
Gonna let it stew for a couple hours. I ended up not using a can of tomatoes, a can of beans and a can of corn, but I might add them in anyways if it looks too meaty after it simmers down a bit. Last batch I made was a little too thick, so I'm gonna watch my water level closer this time.
I really wanted to add some beef chunks as well, but I really suck at grocery shopping for real people food, so I wasn't sure what cut to get. I'll have to research and find out for next time cause I had a cup from a batch a co worker made and it was fanfuckingtastic! I cheated and stole a big bite from it before I covered it for simmering and it's already pretty badass. I'm prolly gonna end up adding more Tabasco sauce though.
Oh shit, I almost forgot, I broke my f---ing spatula while browning the meat!!! I'm kinda pissed. It looks like this now:

add a few beef bullion cubes and a little brown sugar to offset the tartness from the tomatoes.
1/2 teaspoon of cayenne as well.
if you are going to add real beef make sure you cook the shit out of it so it is tender. _________________

That's exactly what I just did. It's a ton of f---ing chili for a single dude to eat, but the shit keeps so well, I'll freeze half of it if I don't think I'll be able to get it down in a reasonable amount of time after this weekend. I love chili as much as the next guy, but eating it every single day can get a little ridiculous. Well maybe not, really, but I've never had this big a batch all to myself before, so we'll see.
I've got a pack of dogs here, but I'm gonna go get some fries, an onion and some shredded cheese and have chili dogs and chili cheese fries as long as my gastrointestinal tract can handle it.
I'm already eating my second bowl of it tonight and it's still simmering. Gonna take it off soon so I can cool it for refrigeration.
Idin: it's not tart or bitter at all. It's actually really rich and almost sweet. It's definitely not fancy. I never wanted it to be. I don't understand all the goofy shit people put in chili like chocolate and beer. _________________
